Last week's menu revisited

I seriously had my work cut out for me this week guys.  After I hit publish on my menu post, I realized that this week I would be cooking 4 different types of meat, as well as employing the following cooking methods:  braising, grilling, roasting, baking, and sautéing.  Once I realized this I immediately wanted to delete the post and then Google the phone number for Papa John’s pizza. 
Cooking new things scares me, but I stuck with it.  And it was soo worth it!  That’s the beauty of PW’s recipes (with the help of a couple frantic Google searches to double check my methods) – if I can do it, you can too!
In an effort to avoid the longest post ever, I will recap each recipe in a couple different posts.  First up:  PW’s Tasty Kitchen Dr. Pepper pulled pork sandwich.  This was awesome!  I was nervous, because it cooks for 6 hours, which is a huge time investment if it doesn’t work out, but it was totally easy!

I originally was going to leave off the cole slaw because I don't like it, but after looking over the ingredients and realizing that I like all of them, and have them on hand, I whipped it up at the last minute.  It totally made the sandwich!  It was kind of acidic which went really well with the sweetness of the BBQ.  The only adjustment I made was I cut the cayenne pepper from 2 tsp to 1.5 tsp. which I was glad I did, because it was still pretty spicy.  But we are wimps about spice!
The recipe makes a lot, and we've been eating the leftovers all week, and it just as delicious the second time!  Bottom line is definitely a recipe I will make again!

yum! I make pulled BBQ beef sandwiches in the crock-pot but, I use a can of Coke. And I also top with coleslaw! Great cooks think alike!

Now I'm definitely making that sandwich. The ingredients are kinda intimidating but it sounds AMAZING.
